Vegan Banana Chocolate Chip Muffins


Every time I make this recipe I remember this one Seinfeld episode, when Elaine wants to sell just the muffin tops and trying to find what to do with the remaining stumps. It's a truly funny episode.

This recipe is an opening to many variations, both sweet and salty. You can make sweet muffins with all kinds of berries or make salty muffins with different kinds of olives and some vegan cheese to go with it.

I didn't mention any kind of sweeteners on purpose. I find the banana and the chocolate chips sweet enough, it's really not necessary to add more sweet.

The Ingredients :


For about 12 Muffins –

One and a half cups of whole grain flour
Two teaspoons of baking powder
Half a spoon of sea salt
One spoon vinegar
Quarter cup oil
A spoon of vanilla extract      
One cup of warm water (you can use also vegan milk)

A few soft and sweet bananas
Vegan chocolate chips
Two spoons of cocoa powder




 










Mix the dry ingredients and the wet ones – without the water, separately. Then mix them together and add gradually the warm water. Mix it and add water until you get a nice and thick (not too liquid) mixture. Crush the bananas and add to the mix with the cocoa and the chocolate chips. In the meantime heat the oven to 200 degrees. The high heat helps the muffins rise.

After it's all mixed (you can taste it, it's without eggs!), fill paper cups with the mixture 3\4 high, and place in a muffin baking tray. Put them in the oven until they rise fully, about 20 minutes.

It goes great with a nice and strong cup of espresso or with a warm tea. Enjoy!
